We all use mayonnaise, especially during the summer. Think of all those burgers, potato salads, momos, macaroni salads and numerous other dishes you will make using mayonnaise. Now, granted, mayonnaise is not prohibitively expensive to buy, but what if you could make your own and what if that mayonnaise was the best you’d ever tasted? Homemade mayonnaise is not very complicated and the taste is certainly worth what little effort it does require. Let’s go through the process of making your own mayonnaise.
Now come to the point, First gather your ingredients. And All that is needed for homemade mayo aka Mayonnaise are following:
- 2 large eggs,
- ¼ cup red wine vinegar (may use white wine vinegar as a substitute),
- 1 tsp lemon juice,
- a little salt to taste,
- and one and a half cups of a good quality oil ( I prefer olive oil as I feel it is healthier and gives my mayonnaise a very mild, pleasant flavor).
Now, I have found that using a wire whisk and a metal bowl work best for making mayonnaise, however if you have a kitchenaid mixer with whisk attachment that would also work.
Now, separate your eggs, set aside the whites for use another time or toss them out (I think that is a waste as you can always use a good meringue) and place your yolks in your medium sized metal bowl. Add salt (sea salt or kosher salt is my preference) to taste. Next add your red or white wine vinegar and lemon juice and whisk these ingredients until combined.
Next comes the tricky part. You are going to, very slowly, and while whisking, add the oil. I use a dropper and do this drop by drop until my mixture starts to look like mayonnaise, then you can add the oil in a slow, steady stream until it is all incorporated.
Voila! Easy, homemade, healthy and delicious mayonnaise without all the preservatives and additives found in the store bought stuff.
Try experimenting with your mayonnaise by using different oils like safflower, canola, or peanut oil, or by adding Dijon mustard, basil, or other herbs and spices.
